Iced Lavender Foam Matcha Latte

I have been trying to make the perfect dairy free and unrefined sugar matcha latte with lavender foam for a while. So many failed attempts but I do believe I am getting closer to my perfection. I have tried various methods/substitutes and will talk about those also.

The ingredients for the Matcha Latte are:
1 cup unsweetened dairy free milk (oat milk is creamier but I have also used almond milk)
1 tsp unsweetened matcha powder (this is bitter, so I cut mine back from 2 tsp to 1 tsp)
1 Tbsp coconut sugar
Directions for the Matcha Latte:
1) Heat the milk until it starts steaming but not boiling.
2) Add the sugar and matcha and whisk until well blended. You can use a frother, blender, or whatever you have on hand. I have used a frother mostly but recently blended it in a Ninja Magic Bullet blender.
3) Pour into a jar and let it cool. Put it in the refrigerator for faster cooling.
The ingredients for the Lavender foam are:
1/3 cup unsweetened full-fat coconut milk (you can use oat milk if you have a good frother otherwise, dairy free milk does not froth very well)
2 Tbsp butterfly pea flowers (this gives the foam the lavender color). You can omit this ingredient if you don’t care about the pretty lavender color.
1 ½ tsp lavender flowers (if you are in a hurry and don’t want to simmer these ingredients together, I’ve added 1 drop of DoTerra Lavender essential oil into the coconut milk before).
1 tsp coconut sugar

Directions for the Lavender foam:
1) Add all the ingredients together in a pan and put on medium heat.
2) Leave until mixture begins to steam. This doesn’t take long.
3) Put the lid on, turn off the heat, and leave covered for 15 or so minutes.
4) Strain out the plant materials and let cool in the refrigerator for about 15 minutes.
5) Froth using a frother, blender or whatever you have on hand.

Assemble the two by:
1) Filling a glass with ice
2) Re-shake the matcha latte to blend things up and pour over the ice
3) Spoon the blue lavender foam over the top of the match for the two-toned effect!
Enjoy!

This turned out pretty good! I don't think I will change anything in this recipe and it is so much healthier than what you go out and buy. It is dairy free and refined sugar free. And no chemicals to get the added lavender color! Yay!

Other options not listed above:
In a hurry, I have just blended cold almond milk, matcha powder and coconut sugar in a Ninja Magic Bullet blender. For the lavender foam, I put it in a frothing machine set for a cold froth and then combined the two over ice.
